Cooking the perfect pearls.
The pearl to water ratio is 1:8
- 1.Bring the water to a roaring boil in a pot.
- 2.Put the tapioca pearls into the boiling water.
- 3.Stir gently to keep the pearls from sticking to each other and the pot.
- 4.Boil till the pearls are floating on the surface.
- 5.Reduce heat to a medium boil, and boil for 15 min. (stir from time to time).
- 6.Remove from heat and leave the pearls in for 20 min. with a lid on.
- 7.Strain the peals in a fine mesh strainer, and rinse the pearls in a bowl of fresh clean water. While gently stirring to keep them from sticking to each other.
- 8.Strain again and put the pearls into a syrup (50/50 water and sugar)
- 9.Serve with your favorite drink and enjoy the chewy tapioca pearls.
